Grill Fruits and Veggies this Summer

Healthy Kids Challenge wants you to add grilling fruits and veggies to your summertime cookout list. Cooking fruits and veggies on the grill can provide a different taste and texture experience that might get you eating more healthy produce!
Try these ideas:

  • Fruits: Slice peaches in half and plantains (similar to a banana) in half lengthwise. Spray with a butter-flavored cooking spray and grill for 1-2 minutes until soft. Remove and serve.
  • Veggies: Cut green (red, yellow) peppers, zucchini and summer squash into similar size chunks. Also use cherry tomatoes and mushrooms, if desired. Using a cooking skewer, stick the different pieces of veggies on the skewer and brush with regular Italian salad dressing. Place on the hot grill turning every few minutes until veggies are soft. Remove and serve.
